Crispy Zucchini and Carrot Veggie Patties

Easy Veggie Patties

 

Ingredients:

1 zucchini, grated

2 carrots, grated

1/2 cup broccoli, grated

1/3 cup flour

3 eggs

1/2 teaspoon Cajun seasoning

1/2 teaspoon pepper

2 tablespoons vegetable oil

Instructions:

Prepare the vegetables: Grate the zucchini, carrots, and broccoli. Place the grated vegetables in a clean kitchen towel or cheesecloth and squeeze out excess moisture.

 

Mix ingredients: In a large mixing bowl, combine the grated vegetables, flour, eggs, Cajun seasoning, and pepper. Stir until well mixed. The mixture should hold together; if it’s too wet, you can add a bit more flour.

 

Heat the oil: Heat the vegetable oil in a large skillet over medium heat.

 

Form patties: Using your hands or a spoon, form the vegetable mixture into small patties, about 2-3 inches in diameter.

 

Cook the patties: Place the patties in the hot skillet and cook for about 3-4 minutes on each side, or until they are golden brown and crispy.

 

Drain and serve: Remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil.
