Creamy Garlic Mushrooms and Bacon
Ingredients
6–8 slices bacon, chopped
1 tbsp butter
1 small onion, finely chopped
3–4 garlic cloves, minced
1 lb (450 g) mushrooms, sliced (button or cremini)
1 cup heavy cream (or half-and-half for lighter)
¼ cup grated parmesan
½ tsp black pepper
½ tsp salt (adjust depending on bacon saltiness)
½ tsp dried thyme or Italian seasoning
Fresh parsley, chopped (for garnish)
Optional: a splash of white wine (2–3 tbsp)
Instructions
1. Cook the Bacon
Place chopped bacon in a large skillet over medium heat.
Cook until crispy (5–7 minutes).
Remove bacon and set aside, leaving the bacon drippings in the pan.
2. Sauté Onion & Garlic
Add 1 tbsp butter to the pan.
Add the chopped onion and cook 2–3 minutes until soft.
Add minced garlic and cook 30 seconds until fragrant.
3. Cook the Mushrooms
Add sliced mushrooms to the skillet.
Season with a bit of salt and pepper.
Cook 5–7 minutes until they release their moisture and start turning golden.
Optional: add a splash of white wine and cook 1–2 minutes to reduce.
4. Make the Cream Sauce
Pour in the cream.
Add parmesan and thyme/Italian seasoning.
Stir well and simmer for 3–4 minutes until the sauce thickens and becomes creamy.
5. Add Bacon Back In
Stir in the cooked bacon.
Taste and adjust salt/pepper to your liking.
6. Serve
Delicious served over:
Toasted bread
Chicken breast
Steak
Pasta
Mashed potatoes
Or as a rich side dish
Garnish with fresh parsley.

Don’t salt the mushrooms early — it prevents browning.
Swap cream for evaporated milk for a lighter version.
Add spinach for color and nutrition.
Add chili flakes for a spicy kick.
