Beef Stew with Toasted Bread

This hearty beef stew is the perfect comfort meal, packed with tender chunks of beef, flavorful broth, and savory vegetables. It’s a warm, satisfying dish that pairs beautifully with toasted bread for a truly comforting experience. Ideal for cozy nights or feeding a crowd, this recipe is simple yet full of flavor.

 

Ingredients:

 

1 lb (450g) beef stew meat, cut into chunks

1 medium onion, chopped

2 cloves garlic, minced

2 carrots, peeled and sliced

2 celery stalks, chopped

4 cups beef broth

2 tbsp olive oil

1 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp dried rosemary

1 bay leaf

Salt and pepper to taste

2 slices of crusty bread, toasted (for serving)

Fresh parsley, chopped (for garnish)

Instructions:

 

Sear the Beef:

In a large pot, heat olive oil over medium-high heat. Add the beef chunks and sear until browned on all sides. Remove the beef and set it aside.

Sauté Vegetables:

In the same pot, add the chopped onions, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables start to soften. Add the garlic and cook for another minute.

Simmer the Stew:

Return the beef to the pot. Add the beef broth, Worcestershire sauce, thyme, rosemary, bay leaf, salt, and pepper. Stir to combine, then bring the mixture to a boil.

Cook the Stew:

Once it reaches a boil, reduce the heat to low, cover the pot, and let it simmer for 1.5 to 2 hours, or until the beef is tender and the flavors are well combined.

Prepare Toasted Bread:

While the stew is simmering, toast two slices of crusty bread. You can also rub them with a bit of garlic or butter for extra flavor if you prefer.

Serve and Garnish:

Remove the bay leaf from the stew. Serve the beef stew in bowls, topped with fresh parsley and a slice of toasted bread on the side.
