Ingredients
For the Filling:
1 lb lean ground beef
1 cup diced yellow onion
1 cup mini pepperoni (or chopped regular pepperoni)
1 cup pizza sauce (plus extra for topping)
1 tsp garlic powder
1 tsp dried oregano
½ tsp red pepper flakes (optional)
Salt and pepper to taste
For Assembly:
8 medium flour tortillas
2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
1 cup pizza sauce (for topping)
Fresh basil or parsley (for garnish)
Instructions
1. Preheat Oven:
Preheat your oven to 375°F (190°C).
2. Cook the Filling:
In a large skillet over medium heat, cook the ground beef and diced onions until the meat is browned and the onions are soft—about 6–8 minutes.
Drain any excess fat.
Stir in pepperoni, 1 cup of pizza sauce, garlic powder, oregano, and red pepper flakes.
Simmer for 2–3 minutes, then remove from heat.
3. Assemble the Enchiladas:
Lay out each tortilla.
Spoon about ¼ cup of the beef mixture down the center.
Sprinkle a bit of mozzarella cheese over the filling.
Roll up the tortilla and place seam-side down in a greased 9×13 baking dish.
Repeat with all tortillas.
4. Top and Bake:
Spread 1 cup of pizza sauce evenly over the rolled tortillas.
Sprinkle with the remaining mozzarella and Parmesan cheese.
Bake uncovered for 20–25 minutes, or until cheese is melted and bubbly.
5. Garnish and Serve:
Let cool slightly, then garnish with chopped fresh basil or parsley.
Serve hot with a green salad or garlic bread.
