1 cup orzo pasta

1 lb shrimp, peeled and deveined

2 tbsp olive oil (divided)

3 cloves garlic, minced

1 tsp lemon zest

2 tbsp lemon juice

2 cups fresh spinach

1/4 cup grated Parmesan cheese

1/2 tsp red pepper flakes (optional)

Salt & pepper to taste

1️⃣ Cook the orzo: Boil orzo in salted water according to package instructions (about 8-10 mins). Drain and set aside.
